Ever notice the difference between fresh rosemary and dried? Between fresh parsley and dried? Don't you prefer fresh spices and herbs to dried or frozen? Most cooks do, and this is evidenced by the sharp rise in fresh herbs available in produce sections nationwide.

Before Univer Foods USA began to import fresh paprika straight from the paprika growing regions of Hungary (arguably the world's best), it was not available in paste and sauce form in this country. It was brought in in suitcases by travelers who had experienced the unique flavors and beautiful color brought to plain and sophisticated dishes alike.

Cooks and even chefs use powdered paprika mostly for color. Oh, there are smoky Hungarian and Spanish paprikas that do have a certain flavor, which is nothing like fresh paprika. Domestic paprika has often been altered to remove flavor and vitamins. When you see a product that has in its ingredients list "coloring agent added" it's usually domestic paprika. And imported paprika is expensive, too, but it lasts forever, because most cooks use it on deviled eggs and to dust potato salad, not realizing that they are missing the true flavor of this lovely spice.
